Carboxymethyl Cellulose cmc usually made by natural cellulose with caustic and monochloroacetic acid reaction system, the main byproduct of sodium chloride and ethanol acid sodium. It belongs to the modification natural cellulose. At present the United Nations Food and Agriculture Organization (FAO) and the World Health Organization said it was formally called modification cellulose.

The main indicators that weigh the quality of sodium carboxymethyl cellulose is the degree of substitution and viscosity. Gernally, different degree of substitution lead to different character of carboxymethyl cellulose. Transparency and stability of the solution will much better with the increase of degree of substitution. Degree of substitution between 0.7-1.2 carboxymethyl cellulose have very good transparency and viscosity can reach biggest when water solution with pH value 6-9. Its solution is pseudoplastic fluid. With the increasing of shear rate, apparent viscosity is reduced, and do not have relationship with shearing time. When the shear suspended it can back to the original viscosity immediately. Viscosity reduced with increasing of temperature and will recovery after cooling. But if under high temperature for long time may cause degradation of the CMC and lead to reduction of viscostiy. Also viscosity will reduce when pH value become lower. This is because under acid environment carboxyl is dampening ionization so that incur viscosity landing.

Carboxymethyl Cellulose cmc is anionic polymers, can interact with some positively charged proteins to generate stable protein dispersion system, so as to extend PH range the protein solution. Besides, now already have acid and salt resistant products in the market. Carboxymethyl cellulose cmc can suspend the distribution with hydrophilic colloid such as xanthan gum, guar bean gum, pectin, dextrin and emulsifying agent , can make advantages complementary, and synergy effect, reduce the consumption capital.
